This year’s animal-free Thanksgiving Feast at Ashley and Nick’s house culminated with this sensational Chocolate-Chip Cheesecake.  Absolutely fantastic!

Nick’s Il Moro Salad (Animal Free!)
 
We had this salad at Nick and Ashley’s a few months ago.  Shirley has decided it is her favorite salad “ever”!   It’s Nick’s favorite, too.

Ashley’s Spicy Potato Salad (Animal Free!)
 
Part of the animal-free Thanksgiving Feast at Ashley and Nick’s house last November included a TERRIFIC, spicy and colorful variation of that time-honored classic potato salad that turned out to be Ashley’s original recipe!
 
We have our own version ... which we think is pretty nifty ... but if you’re hungry for something with a little more zing ... guaranteed to make you sit up and take

Shirley’s California Pasta (Animal Free!)
 
This is great for a summer afternoon!  It’s light but satisfying ... and fun to make!
 
4 oz. pasta (wheel or bowtie)
4 oz. fresh broccoli
1 tbs chopped fresh basil (or 1/2 teaspoon dried basil, crushed)
2 cloves fresh garlic, halved lengthwise (or garlic powder)
2 to 4 tbs Nucoa margarine (or butter for a non-vegan version)
2 tbs olive oil
1/4 cup grated Vegan Parmesan Cheese
Salt & pepper

Chocolate Cake (Animal Free!)
 
CAKE:
 
Ingredients
 
    3 cups flour
    2 cups sugar
    6 tablespoons cocoa
    2 teaspoons baking soda
    1 teaspoon salt
    2 cups water
    3/4 cup vegetable oil
    2 tablespoons vinegar
    2 teaspoons vanilla
 
Directions:
 
Preheat oven to 350 degrees.
 
Mix dry ingredients first.  Once the mixture is even, mix in wet ingredients.
